Our authentic tomato sauce is made of carrots, onion, *celery, tomatoes, which are boiled for a few hours at low heat.

Ghee - the wisdom of the East has brought it to us - purified (overboiled), *cow butter, well digestible and suitable for heat treatment, unlike its ordinary prototype. With the color of amber and light and a sweet aroma of *walnuts.

Our rice - Basmati, soaked and steamed.

Warm vegetables leave their aroma, like this - in order to keep the vitamins and the crunchiness to remain, for a short while the vegetables will hop in a steaming dance any day.

Vinitsa is made from 100% Mavrud, dried in open air for 2 months. Through this technology, they reveal how explosive and impressive the Mavrud variety can be. Clear, very beautiful garnet color. In the beginning – weaker
intense nose, in which aromas of ground black pepper, rosehip marmalade, prunes and black
chocolate. Velvety tannins, very good structure, overripe black fruit on the palate and an attractive, very long finish with cocoa, tea and dried fruit. A very interesting wine that leaves impressions in the aftertaste for a long time and shows potential for aging.

“ZAGREI” CELLAR Zagrei Winery is located near Parvomai and was established in 1998. Zagrei from ancient Greek means “the great hunter” and is considered the prototype of the god of wine and revelry, Dionysus. Behind the history of this winery stands a modern Bulgarian family. Since 2010, the vineyards have been certified as organic. The winery is a modern complex, and 500 barrique barrels of Strandzha oak are used for aging the wine. The distinctive feature of Zagrei is the mavrud. Three varietal wines are made from it, a rosé, the white Mavrud blanc de noir and the cellar’s masterpiece – the Vinica wine, produced using a technology similar to the Italian Amarone.
